The bottom box contains the Chocolate tour of 5 countries: Madagascar, Venezuela, Dominican Republic, Ecuador, and Ghana. There are 8 tasting squares for each of the 5 countries (total of 40 tasting squares). Each country has its own distinctive flavor palate and cacao percentages range from 64% to 72%. Oliver includes tasting notes for each country, along with his personal notes on how to appreciate and taste chocolate.

The middle box contains 8 dark chocolate ganaches made with 72% dark chocolate from Venezuela, considered by many experts to be one of the finest producers of cacao. This dark, intense, dramatic taste is very popular with Oliver’s patrons.

The top coral box contains 8 tasting squares of “70% Grand Cao” organic chocolate. This is the definitive taste of organic chocolate sought after by connoisseurs.

Madagascar labelThe rich lands on either side of the Sambirano River in northern Madagascar develop red acidulous notes in fruits and aromas that are unique to "Trinitario" beans. The chocolate presented is a composition of rate "Criollo" and "Trinitario" beans. Dominican Republic labelThe island with the highest elevation in the West Indies produces "Trinitario" cocoa beans from very old plantations. Discover upon first taste flavors of roasted almonds which develop into notes of candied yellow-fruit.
Ecuador labelExperience delicate floral notes of jasmine and orange blossom give way to a long finish of refined bitterness and woody flavors. Tasting these percentages will help you to develop a sense for aromatic floral notes as they progress into the strong base flavors of cocoa. Venezuela labelThis chocolate is made from rare cocoa beans and can be compared to great wines with high tannins and a long lasting finish on the palate.
