My oldest friend who will no longer let me call her that and now wants me to call her my dearest friend has the wish every January that all of her clothing was more like pajamas fitted with forgiving elastic around the waist and all her furniture more like a sumptuous bed so that she can lay around the house all day and enjoy breakfast in bed all day. I can appreciate this philosophy by eating, napping and reading something utterly sleepy to repeat as needed. If you feel compelled to do something anything to be productive, keep a notepad (not a laptop computer) by the bed and write down the things you are putting off today until tomorrow and don’t think about it again. Should the phone ring you have my expressed permission to do as you please and not take the call. We're not home either. Your world of hard work is good , but it will always be there waiting. Everyone deserves a skip day.

or practice making a batch from scratch
Skills: mix batters for quick bread and
Pancakes, cooking rice
If using a mix, find a complete mix that
only requires water to avoid missing any ingredient needed.
Follow the directions to make 1 ½- 2 cups of batter.
The batter can be divided in half to make twin types of pancakes.
Refrigerate the batter until ready to use.
Preheat the largest non stick pan available and lightly rub vegetable oil or use spray release.
Test making one smaller pancake before jumping in to the entire batter.
Griddle or Large Pan
16- 6 inch Pancakes
All purpose Flour -3 Cups
Baking Powder -3 Teaspoons
Sugar- ¼ Cup
Salt- 1 Teaspoon
Milk- 3 Cups
Sift the dry ingredients together
Mix the wet ingredients together
Stir the wet into the dry and allow to rest a few minutes
There should be some tiny lumps
